300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Premix (makes 850ml, to serve 10)

200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Put every ingredients in a pan, heat until it reaches a simmer, mixing so the sugar melts. Next, take off the burner and leave to reach room temperature entirely. Pour to a sterilised bottle, seal and refrigerate it chilled, it can be stored for up to one month.
To make Batch Mix: Combine all the liquids into one large bottle, let it rest for an hour, then strain best through a fine cloth, to ensure it's completely strained.
When ready to serve: Measure 85ml of the cocktail base to a stirring glass containing ice, gently stirring gently for a minute to cool it down. Pour into a frosted cocktail glass or a similar vessel, top with some cranberries and complete it with a light spray of the essential oil above the glass.
